Spicy Pumpkin Hummus

Munchies for the Road

 Yields:  8 Servings


Ingredients

  • 1 can chickpeas, rinsed and drained
  • 1 can pumpkin puree
  • 2 cloves garlic
  • 2 tablespoons tahini
  • 2 teaspoons ground cumin
  • 1/4 teaspoon ground coriander
  • 1/2 teaspoon chili powder
  • 3/4 teaspoon cinnamon
  • Juice of 2 lemons
  • 2 teaspoons salt
  • Freshly ground black pepper
  • 3 tablespoons olive oil

  

Directions

  • Place all ingredients in the bowl of a food processor or high-powered blender and process until smooth
  • Adjust seasoning to your taste.
  • Cover and store in the refrigerator.      
  • Keeps fresh up to 4 days.
  • Serve with spicy homemade pita chips

Time for a Road Trip?


Here are some great take alongs that won't ruin your health. They'll keep you awake, alert and full of energy on the road; satisfy your urge to munch; and help you maintain a good weight.


  • Raw or dry-toasted nuts and seeds
  • Make-you-own trail mix with nuts, seeds, toasted coconut chips, a sprinkling of your favorite dried fruit for a bit of sweetness (raisins, cranberries, blueberries)
  • Hard-boiled eggs
  • Pre-cut veggie sticks
  • Small packets of almond butter or hummus for dipping
  • Fresh fruit (stone fruit, oranges, apples, pears)
  • Air-popped popcorn
  • Home-made low-sugar muffins 


Make sure to have plenty of good, filtered water with you.
